Tradition reimagined
We craft our wines with dedication and a passion for detail. This philosophy shapes every step of the process—from the first pruning to bottling. We don’t follow a rigid formula; instead, we decide—based on the vineyard’s terroir and the vintage—which approach best brings out the wine’s unique character. This results in both single-vineyard wines with distinct personalities and cuvées made from selected plots across various steep slopes of the Mosel. For us, both are integral parts of our signature style.
Paulessen and Hofpäsch are historic family and estate names in Leiwen that have been passed down since the 17th century. With “Dajoar”—Moselle Franconian for “as in the old days”—we are reviving the traditional approach to winemaking: characterized by patience, manual labor, and a trust in natural processes.
Both in the vineyard and in the cellar, we work with care and a deep respect for tradition. All our wines undergo spontaneous fermentation without the use of commercial yeasts. Each vineyard block and each harvest day is vinified separately, ensuring that the wine’s origin and vintage remain true to form.
